To prepare the Bamboo Chicken (Jungle Tradition) all you need is listed below.

INGREDIENTS:

Chicken- 250 g.
Ghee-2 tea spoons
Ginger&garlic paste-2 tea spoons
Garam masala-2 tea spoons
Green chilli-1(slices)
Black pepper powder-1 pinch
Red chilli powder-2 tea spoons
salt-to taste
Bamboo stick- 1 (Big and Wide)
Banana leaf-piece
Natural fire arrangement
oil-To deep fry.

Bamboo chicken

PREPARATION:

  • Clean the chicken well.
  • Now take a bowl and add the chicken in to the bowl.
  • Make the garam masala by your own, it'll give you more flavor and very good taste for your recipe. The preparation of garam masala is described in Hyderabadi special chicken biryani preparation.
  • Now add the Ghee, Ginger&garlic paste, Garam masala, Black pepper powder, Red chilli powder, Green  chilli, salt and mix it well.
  • Now take a big and wide bamboo stick.(The juices of the bamboo goes in to the chicken and gives you the good taste).
  • Now add the chicken mixture in to the Bamboo stick and now cover the upper end of the bamboo stick with banana leaf(No stem will escape from the inner side).
  • Now Place this Bamboo stick on fire for 15 to 20 minutes.(Natural fire will covers all the surface of the bamboo and it'll give you the best taste of the chicken )
  • After that remove the Bamboo sticks and serve the chicken in to a plate.

To prepare the Chicken Pakora(pakodi) all you need is listed below.

INGREDIENTS:

Chicken- 250 g.
Egg-1(optional)
Rice flour-1 table spoons
Chick pea flour (Chanaadaal powder)-6 tea spoon
Ginger&garlic paste-2 tea spoons
Garam masala-2 tea spoons
Black pepper powder-2 pinches
Red chilli powder-2 tea spoons
salt-to taste
red food color-1 pinch(optional)
Curry leaves-5 to 10
oil-To deep fry.




PREPARATION:

  • Clean the chicken well and make a mixture for pakora.
  • Now take a bowl and add the chicken in to the bowl.
  • Make the garam masala by your own, it'll give you more flavor and very good taste for your recipe. The preparation of garam masala is desccribed in Hyderabadi special chicken biryani prepaeration.
  • Now add the Ginger&garlic paste, Garam masala, Black pepper powder, Red chilli powder, salt, red food color, Curry leaves, one egg and mix it well.
  • Now add all flours in to the mixture.You may use all purpose flour than chickpea flour. But actually the pakodi is made with chickpea flour only.
  • Now heat the oil in a pan.
  • When the oil is heated for deep fry, add the marinated chicken pieces in to the oil.
  • Saute them for 1 minute on high flame and remove them from the pan and after 5 minutes again add these pieces in to the pan, now saute them for about 5 minutes on medium flame.
  • Now remove the chicken pakora from the pan and Dry up the oil.
  • Serve it on a plate by garnishing it with coriander leaves.
                      Now the delicious spicy Chicken Pakora is ready to serve.

To prepare the Chicken lollipops all you need is listed below.

INGREDIENTS:

Chicken lollipops-10 to 15 pieces
Ginger&garlic paste-1 tea spoon
Black pepper powder-1/2 tea spoon
Red chilli powder/paste-1 table spoon
soya sauce-1 table spoon
salt- to taste
Vinegar-1 tea spoon(Optional)
Corn flour-4 table spoons
All purpose flour(maida)-2 table spoons
Red food color-1 pinch(Optional) 

Seasoning:

Oil-3 table spoons
Ginger-1 table spoon(Chopped)
Garlic-1 table spoon(Chopped)
Spring onions-1 table spoon
Red chilli sauce-2 table spoons
Tomato ketchup-2 table spoons
Soya sauce-2 table spoons
Sugar-1 tea spoon
Vinegar-1 tea spoon
Corn flour-1 tea spoon
Water- 1 cup



PREPARATION:

  • Marinate the chicken with Ginger garlic paste, Red chilli powder, Black pepper powder, 1/2tb.sp. soya sauce, Then keep it a side for at least 30 minutes.
  • Now prepare a thick batter by mixing Corn flour, maida, Remaining soya sauce, salt, Red chilli paste in a bowl. If you want more color, you can also add some food colour.
  • If you add Red chilli paste, it gives a very fine red color to the batter. So there is no need to add any extra color to it. But if you add chilli powder you can add the food color.
  • Now, by adding little bit of water prepare a thick batter.
  • Now take a pan on flame and pour some oil for deep fry.
  • Now dip the lollipops in to the batter and deep fry them on low flame until it cooks.
  • Now the delicious Chicken lollipops are ready to eat.
             But if you want some sweet and juicyness you can made by seasoning. Follow the below steps for seasoning.
  • Take a pan and add 3tb.sp. oil in to it.
  • Now add ginger and garlic pieces, saute them until raw smell goes up.
  • Now add chilli sauce, then Tomato ketchup, soya sauce and the sugar. And give it a stir.
  • Now add 1t.sp. of corn flour in to 3 spoons of water and mix it well, then add this mixture in to the pan.
  • Then the mixture was thickened.
  • Now add the chicken pieces in to the pan and let it for 3 minutes.
  • Finally add some spring onions and switch the flame off.
                      Now the delicious spicy and juicy Chicken lollipops are ready to serve.

To prepare the Chicken Manchurian all you need is listed below.

INGREDIENTS:

Chicken-500 g.
Egg-1
Corn flour-3 table spoons
All purpose flour(Maida)-1 table spoon
Black pepper powder-1 tea spoon
Red chilli powder-1 table spoon
Ginger&garlic paste-1 table spoon
Ajinomoto- 1 tea spoon
Ginger-1 table spoon(Finely chopped)
Garlic- 1table spoon(Finely chopped)
Green chillies- 4
Vinegar-2 tea spoons
Dark soya sauce-4 table spoons
Tomato ketchup-2 table spoons
Red chilli sauce- 2 table spoons
Sugar-1/2 tea spoons
Spring onions- 2 table spoons
Oil- To deep fry and to seasoning
Salt- required
Water-1 Cup


PREPARATION:

  • Marinate the chicken with Egg, Ginger garlic paste, 1/2t.sp. black pepper powder, 1tb.sp. of Red chilli powder, 1/2t.sp. of Ajinomoto, 1t.sp. of vinegar, 1tb.sp. of saya sauce, Salt, 2tb.sp. of Corn flour and 1tb.sp. of maida. Set it a side for 20 minutes.
  • Now deep fry the chicken until golden and crisp on low flame and keep it a side.
  • Now take a pan and add 4tb.sp. of oil and add chopped ginger, garlic cloves and 1tb.sp. of spring onions and 4 green chillies, then add 1/2t.sp. of black pepper powder.
  • Don't saute the ingredients fully, Saute them until raw smell gone away.
  • Now add Tomato ketchup, Red chilli sauce, Soya sauce, sugar, salt, 1/2 spoon of ajinomoto and vinegar and stir it continuously.
  • Now add 2 tb.sp. of water and cook it for few minutes
  • Now add 1 tb.sp. of corn flour in to 2 tb.sp. of water and add this mixture in to the pan.
  • Cook the mixture for 2 minutes and add the fried chicken pieces, and cook them for 3 more minutes and switch the flame off.
  • Now garnish it with spring onions
                     The delicious chinese recipe Chicken manchurian is now ready to serve.

Kadai Chicken

Let's go for the process of Kadai Chicken
To prepare the Kadai Chicken all you need is listed below.

INGREDIENTS:

Chicken-1 Kg.
Onions-1 big(Cut in to cubes) & 2(finely chopped)
Capsicum-1( Cubes)
Cumin-1 table spoon
Ginger&garlic paste-1 table spoon
Red chilli powder-1 table spoon
Turmeric powder-1 tea spoon
Dried red chillies- 2
Garam masala-1 table spoon
Kadai masala-4 table spoons
Tomatoes- 4 big(finely chopped)
oil-6 table spoons
Salt- to taste


PREPARATION:

Kadai masala preparation:
  • Coriander seeds-3 table spoons
  • Cumin seeds- 1 table spoon
  • Fennel seeds- 1 table sppon
  • Black pepper-1 table spoon
  • Dried chillies-6
  • Kasuri methi- 1 tea spoon
             Dry Roast the spices until it gives a nice fragrance.              
             Then grind it roughly as a course powder.




  • Marinate the chicken with Pepper powder, salt and Kadai masala, Set it a side for 20 minutes. 
  • Take a pan and pour 6  table spoons of oil. Then add cubes of Capsicum and Onion.
  • Then saute the cubes until the cubes are slightly cooked and remove it from the pan.
  • Now add cumin seeds and dried chillies in to the pan, saute it for few seconds.
  • Then add finely chopped onions and saute it until the onions get light golden color, then add 1tb.sp. of ginger garlic paste, saute it until raw smell gone away.
  • Now add the chicken pieces in to the pan. and cook it for few minutes and add spices like Turmeric powder, Red chilli powder, 2 tb.sp. of Kadai masala, Garam masala and Salt and give it a good stir.
  • Now add finely chopped tomatoes in to the pan and cook it for 15-20 minutes by placing a lid on it.
  • Now heat the Butter and add 1 tea spoon of red chilli powder and 2 pinches of black pepper powder add this mixture in to the chicken. This gives a good flavor to the chicken.(This step is optional).
  • Now add the Capsicum and onion cubes in to the recipe and cook it for few minutes.
  • Finally add 1 tb.sp. of Kadai masala. 
                  The delicious recipe of Kadai chicken is now ready to serve.

INGREDIENTS:

Chicken- 250 g.
Egg-1
Corn flour-3 table spoons
all purpose flour(Maida)-1 tea spoon
Curd/yogurt-3 table spoons
Lemon juice-1 tea spoon
Ginger&garlic paste-2 tea spoons
Garam masala-2 tea spoons
Ajinamoto-1/2 tea spoon
garlic cloves- 1 tb.sp. (finely chopped)
Black pepper powder-2 pinches
Red chilli powder-2 tea spoons
salt-to taste
red food color-1 pinch(optional)
Cumin seeds- 1 tea spoon
Curry leaves-5 to 10

PREPARATION:

  • Marinate the chicken with Curd, Egg, Corn flour, All purpose flour, Lemon juice, 1t.sp. of ginger garlic paste, 1t.sp. of Garam masala powder, 1t.sp. of red chilli powder, Black pepper powder, ajinomoto and salt to taste. set it a side for few minutes, that all spices are mixed well with the chicken.(Ajinomoto enhance the flaavour of chicken).
  • Now deep fry the chicken in a pan until golden and crisp on low flame, that chicken well cooked in the oil, then drain the chicken in a tissue paper.
  • Now take a wok(pan) and pour 3 tb. sp. of oil in to it.
  • Now add Cumin seeds then Chopped garlic cloves Then Green chillies then Curry leave and 1t.sp. ginger garlic paste and saute them for few seconds.
  • Add  food color in to the wok by mixing it with some water..
  • Now add 1tea spoon of red chilli powder, 1t.sp. garam masala powder. Then add Red chilli paste and little bit of salt.
  • Now it's time to add the crispy Chicken pieces in to the wok, Add the chicken and mix it well.
  • Now cook this mixture for few more minutes and then switch the flame off and garnish it with some Coriander leaves and onions.
                       Now the Delicious Chicken 65 is ready to serve.

Turmeric-1 pinch
Red chilli powder-1 table spoon
Black pepper-1 tea spoon
Ginger garlic paste-1 table spoon
Green pepper-4/Required
Spring onions-1/4 cup
Ajinomoto-2 pinches
Garam masala-1 table spoon
Red chilli sauce-2 table spoons
Soya sauce-2 table spoons
Salt- To taste
oil-1 cup

Chilli chicken

PREPARATION:

  • Marinate the chicken with 3tb.sp. of corn flour, Egg, 1t.sp. of Black pepper, Turmeric, 1tb.sp. of Red pepper powder, Corn flour, Ginger and garlic paste and 1 t.sp. of curd and keep it for 20 minutes.
  • Now deep fry the chicken in a pan and drain the chicken pieces from oil.
  • Now add oil in a pan and add chopped garlic also.
  • Saute the garlic for few seconds and now add onion, capsicum cubes and green peppers.
  • Saute them also for more few minutes.
  • Now add 1tb.sp. of tomato ketchup, 2tb.sp. of soya sauce, 2tb.sp. of red chilli sauce, Garam masala, Ajinomoto and cook it for 5 minutes on medium flame.
  • Now add the fried chicken pieces in to the pan and mix it well.
  • Now prepare the corn flour mixture by adding 1 tb.sp. of corn flour in to 1/2 cup of water.
  • Then add this mixture in to the chicken and cook it for 5 minutes.
  • Finally add 1/4 cup of spring onions and mix it well.
                     Now the delicious Chillli chicken is ready to serve.

Butter Chicken

Butter-1 cup

Butter Chicken

PREPARATION:


  • Marinate the chicken with Ginger garlic paste, Tandoori masala, Black pepper, 1t.sp. of Red chilli powder, salt, Curd & Lemon juice, give it a good mix and let it for 20 minutes.
  • Now take a pan and add 3 spoons of oil and add the chicken pieces in to it.
  • Fry the chicken until golden in color.
  • Now take the chicken pieces from the pan and drain the oil from it.
  • Now add 1 tb.sp. of butter and 1 tb.sp. of oil in the pan.
  • Then add chopped ginger in to the pan then add chopped onion.
  • Now add the tomatoes, cashew nuts, salt and red chilli powder in to the pan.
  • Then cook the mixture for 5 minutes.
  • Then take the mixture in to a mixer jar and grind it in to a fine paste.
  • Now in the same pan add 1 tb.sp. of butter and 1t.sp.of oil.
  • Then add the tomato mixture in to the pan and cook it for 5 minutes on high flame.
  • Then add the chicken pieces in to the mixture and let it for 5 minutes on low flame.
  • Now add 1tb.sp. of butter and 1tb.sp. of fresh cream.
  • Finally add crushed kasoori methi in to the pan.
                              
                      Now the Delicious Butter chicken is ready to serve.
                      This Butter chicken goes very good with Roti, Naan, Rice.

Hyderabad Chicken Biryani

HYDERABADI CHICKEN BIRYANI...

To prepare the Chicken biryani all you need is listed below.

INGREDIENTS:

Chicken-500 g.
Basumathi-500 g.
Cloves-5
Star anise-small flower
Mace-Small flower
Nut meg-Small piece
Black peeper-1 tea spoon
Bay leaves-4
Bay flower-1/4 cup
Shahazira-1 tea spoon
Cinnamon-3 pieces
Cardamom-4
Salt- To taste
Mint and coriander leaves paste-1 table spoon
Ghee-3 table spoons
Coriander powder-1 table spoon
Cumin powder-1 tea spoon
Ginger garlic paste-1 table spoon
Oil-1 cup
Lime juice-2 spoons
Milk-3 spoons
saffron/Yellow food color-1 pinch
Curd-1 cup
Coriander leaves-2 bunches
Mint leaves-2 bunches
Green chillies-5(sliced)
Onions-2 big
Turmeric powder-2 pinch
Red chilli powder-1 table spoon



PREPARATION:                                    

Garam masala:

                 Take a mixer jar and add all whole masala spices(Cloves, Star anise, Mace, Nut meg, Black pepper,   2 Bay leaves, Half of the Bay flower, Shahazira, Cinnamon, Cardamom ).

Marination:

                  Take a mixing bowl and add cleanly washed chicken pieces, 1tb.sp.of garam masala powder, 1tb.sp. of red chilli powder, 1tb.sp. of coriander powder, 1tb.sp. of cumin powder, 1tb.sp. of ginger garlic paste, 1 cup of curd, turmeric powder, Lemon juice, 1tb.sp. of mint and coriander leaves paste, salt to taste and 4 tb.sp. of oil and mix it well. Keep the marination in a refrigerator for 4 hours.


Marinated chicken


Brown onions:
                  
                   Chop the onions in to thin slices. Now heat the pan on stove and add oil to deep fry the onions(you on also saute in less oil but the deep fry gives the exact color of the brown onions). Then add the onions and saute the onions till gold and crisp. Now remove the brown onions from the oil and set a side.

Rice:

                   Rinse the Basumathi rice well and soak them for 30 minutes. Now take a bowl on stove and add 1 litre of water. Now it's time to add spices to the rice, which will give a very good aroma to the rice. So add 2 bay leaves, 1t.sp. of shahazira, 1tb.sp. of grinded garam masala, 1tb.sp. of oil, 1/2tb.sp. of ginger garlic paste and 1tb.sp. of salt and boil it for 5 minutes. Now it's time to add soaked basumathi rice in to the bowl and cover it with a lid for 2 minutes. mean while prepare the saffron mixture. Then Cook the rice for 70% level. and switch off the flame and then drain the water from the rice.

                 Add one pinch of saffron in to extreme hot milk and mix it well.

Biryani Process:

  • After 4 hours of marination of the chicken the chicken will absorb all the spices and flavors in to it, now take the marination from the refrigerator.
  • Add this mixture in to a biryani making vessel/thick bottom plated bowl.
  • Now add few brown onions, half of the coriander leaves and mint leaves and green chilli slices.
  • Mix it well and spread over the vessel. And add 1tb.sp. of ghee.
  • Now add rice over the chicken mixture as a layer.
  • Now add remaining Brown onions, mint and coriander leaves as a layer and add 2tb.sp. of ghee.
  • Add half glass of left over water from the rice.
  • Add saffron food color in to the bowl.
  • Seal it with a lid, i.e., no air escapes from the vessel out side.
  • Now place this bowl on a stove, cook it for 5 minutes on a high flame and then cook it for 20 minutes on a medium to low flame. 
  • Now take out the vessel from the stove.
  • Open the vessel and mix it gently.

                       Now The Delicious Special Hyderabadi Chicken Biryani is ready to serve.

Dry Ginger Chicken

Ginger chicken is of two types, DRY type and WET type.

Let's go for the process of DRY Ginger chicken
To prepare the ginger chicken all you need is listed below.
                                             
                               DRY GINGER CHICKEN                                  

INGREDIENTS:

Boneless Chicken – 500g(Small pieces)

For marination:


  • Ginger paste- 1 ½ table spoon
  • black pepper powder- 1 tea spoon 
  • Salt- 1 tea spoon (or as per taste)
  • Lime juice- 1 table spoon
  • Ajinomoto-1 tea spoon 
  • Dark soya sauce- 2 tea spoons
  • Green chilli paste-1/2 table spoon
  • Egg-1
  • Corn flour-1 table spoon 
For preparation:
  • Finely chopped ginger – 1 to 2 tbsp 
  • Ginger juliennes(thin slices) – 1 tbsp (optional)
  • Green chillies-3
  • Green chilli paste-1/2 tea spoon
  • Onions slices- 1/2 cup
  • Sliced Baby corns, Sliced capsicum, sliced mushroom(optional) 
  • Vinegar/lime juice – 1 tbsp (or as per taste)
  • Cooking oil – 2 table spoon                                                                                                                                                                                                                                                                                                                                                                Oil to deep fry
PREPARATION:

Process of marination:
             
                 To prepare the Ginger chicken, first you have to marinate the chicken. For marination add  1 ½ tb.sp. of ginger paste, 1/2tb.sp. of black pepper powder, 1 t.sp. of salt, 1tb.sp. of vinegar, 1 t.sp. of dark soya sauce 1/2tb.sp. of lemon juice, 1/2t.sp. of ajinomoto, 1/2tb.sp.green chilli paste. The flavor of soya sauce very well with ginger paste. Mix  all the ingredients well. Now let the chicken marinate for 20 minutes.
                   Now add half of the egg and 1tb.sp. of cornflour in the chicken marination.

             
Process of cooking:

  • Put a pan on the stove add some oil to deep fry.
  • Add the chicken in to the oil.
  • saute the chicken on medium flame till golden and crisp.
  • Meanwhile take a wok(non stick pan) and add 2tb.sp. of oil in to it.
  • While the oil is heating up, add finely chopped ginger and add 3green chillies in it, Saute until the raw smell disappears.
  • Now add 1/2 spoon of green chilli paste, 1tb.sp. of soya sauce, 1/2tb.sp. of lemon juice, pinch of ajinomoto and salt to taste. Saute until the water dry up.
  • Now its time to add some vegetables, Add sliced baby corns, sliced capsicum, sliced mushroom and black pepper powder give it a toss.
  • Drain the fried chicken on a absorbent paper and add it in to the wok.
  • Now add sliced onion and spring onion green and give it a toss. SO that all chicken pieces coated with sauce.
  • Now this recipe is ready to serve.       
                                                 
                             This ginger chicken is goes very well for snacks.

Wet Ginger Chicken

This is Vivek, I'm here to explore the recipe of Ginger chicken.

Ginger chicken is of two types, DRY type and WET type.

Let's go for the process of WET Ginger chicken
To prepare the ginger chicken all you need is listed below.
                                             
                               WET GINGER CHICKEN                                  

INGREDIENTS:

Chicken – 500g

For marination:

  • Ginger paste- 1 ½ table spoon
  • black pepper powder- 1 tea spoon 
  • Salt- 1 tea spoon (or as per taste)
  • Vinegar- 1 table spoon 
  • light soya sauce- 2 tea spoons (or) dark soya sauce-1tea spoon
  • Finely chopped ginger- 1 table spoon 
For preparation:
  • Finely chopped ginger – 1 to 2 tbsp 
  • Ginger juliennes(thin slices) – 1 tbsp (optional)
  • Onions(finely chopped)-3 cups
  • Spices – 1 tea spoon (each of turmeric powder, red chilli powder and garam masala powder, 2 tea spoon coriander powder)
  • Coriander leaves/cilantro to garnish
  • Honey/sugar (optional) – 1 tbsp;
  • Vinegar/lime juice – 1 tbsp (or as per taste);
  • Cooking oil – 3 to 4 table spoon                                                                                                                                                                                
PREPARATION:

Process of marination:
               
                 To prepare the Ginger chicken, first you have to marinate the chicken. For marination add 1tb.sp. of garlic paste, 1 ½ tb.sp. of ginger paste, 1tb.sp. of black pepper powder, 1 t.sp. of salt, 1tb.sp. of vinegar and 2 t.sp. of light soya sauce. The flavor of soya sauce very well with ginger paste. Mix  all the ingredients well. Now let the chicken marinate for 20 minutes.
             
Process of cooking:

  • Now put a pan on stove and pour 4tb.sp. of oil in it. 
  • While the oil is heating up, add finely chopped ginger in it.
  • Let oil will be heat up along with ginger, Oil infused with the flavor of ginger.
  • When oil heats up, add finely chopped onions, and fry them until golden brown.
  • That gives nice caramel flavor to the recipe.
  • Now add the marinated chicken and spread in to the pan.
  • Then cook the chicken for 5 minutes in medium to high flame.
  • Now give it a flip.
  • When the water is evaporated from the chicken, start adding the spices, which are listed above.
  • Now reduce the heat to it's minimum, till the chicken mixes with the spices.
  • Now add a cup of water and cover the pan with lid and cook the chicken for 15 minutes at medium to high flame.
  • Now stir the recipe well, it's semi gravy recipe.
  • Now add 1tb.sp. of honey to it.
  • And now add some optional ingredients like sliced ginger and vinegar for extra tangyness.
  • Finally add some coriander leaves.
  • Now this recipe is ready to serve.       
                                                   
                             This ginger chicken is goes very well with Roti, Bread, Rice, Fried rice.
